We present a home-style take on a drink featured on a new cocktail list. Designed as a large-volume pre-mixed that's packed full of essence of the Christmas time, which makes it ideal for hosting a festive gathering. Reserve the remaining syrup to use in breakfast cocktails, puddings, or for additional servings of bikinis.
The Bikini Cocktail
Makes enough for 10 people
Ingredients for the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Drink (yields 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Put the listed ingredients into a saucepan, heat until it reaches a gentle boil, stirring so the sugar melts. Then, turn off the burner and leave to cool completely. Transfer into an clean bottle, close it and store chilled, it can be stored for around a month.
To make Premix: Combine all the spirits and syrup into one sizeable container, leave to sit for 60 minutes, then pass it through , ideally through cheesecloth, so it's fully clarified.
For serving: Add 85ml from the premix into your mixing glass containing ice, and agitate lightly for one minute to cool it down. Pour into a cold coupe glass or a similar vessel, garnish with a few cranberries and finish with a quick spritz of mandarin oil over the top.
